My lovely steamed smooth tofu with egg, dried shrimps and glass noodles.
Let’s cook!
Slice smooth tofu into squares.
Arrange tofu in a heatproof bowl.
In a medium bowl, beat the eggs. Then add dried shrimps, glass noodles (I forgot to cut them) and seasoning. Mix it and then add boiling water. Mix again. If you forgot to cut the glass noodles shorter, you can do it now with a scissors. Hehe
Now pour it into the heatproof bowl that you’ve arrange the tofu in earlier.
Steam for about 25 to 30 minutes. If you use a shallower bowl, I think the steaming time can be lessened. Garnish with spring onions, fried shallots and light soy sauce once out of the steamer.
Smooth and yummy! This tofu dish is perfect with a bowl of warm rice. Mmmm…

Steamed Smooth Tofu With Egg, Dried Shrimps & Glass Noodles
Adapted from Beancurd Flavor
Serves 4
1 box smooth tofu
2 tablespoons dried shrimps, soaked and coarsely chopped
15g glass noodles, soaked and cut into 4~6cm length
3 eggs
200ml boiling water
Seasoning:
1 teaspoon salt
1 teaspoon sesame oil
dash of pepper
Topping:
1 tablespoon chopped spring onion
2 shallots, sliced and fried
1/2 to 1 tablespoon light soy sauce
Method:
1. Remove tofu from the box and slice into square sizes. Arrange them in a heatproof bowl.
2. In a medium bowl, beat eggs lightly. Then add dried shrimps, glass noodles and seasoning. Mix well.
3. Then add boiling water and mix again. Pour this mixture into the heatproof bowl.
4. Steam for 25-30 mins until cooked. Remove from steamer, add spring onions, fried shallots and light soy sauce. Serve hot with warm rice.
