This tofu side dish is quite similar to Steamed Silky Soft Tofu dish I made some 6 years back (woah!). As the title of the post suggest, this one has additional ingredients like egg, dried shrimps and glass noodles. Hey hey, I always welcome variety on my dining table. This tofu dish is fairly easy to prepare and all you need to do after that is steam it. Come now…
My lovely steamed soft tofu with egg, dried shrimps and glass noodles.
Slice soft tofu into squares.
Arrange tofu in heatproof bowl.
In a medium bowl, beat the eggs. Then add dried shrimps, glass noodles (I forgot to cut them) and seasoning. Mix it and then add boiling water. Mix again. If you forgot to cut the glass noodles shorter, you can do it now with a scissors. Hehe
Now pour it into the heatproof bowl that you’ve arrange the tofu in earlier.
Steam for about 25 to 30 minutes. If you use shallower bowl, I think the steaming time can be lessen. Garnish with spring onions, fried shallots and light soy sauce once out of the steamer.
Smooth and yummy! This tofu dish is perfect with a bowl of warm rice. Mmmm…
