Failed: Crumbly Tuiles


Because sesame seeds is one of my favorite things in the world, I decided to try my hands on this tuiles recipe making use of sesame seeds. Things aren’t rosy from the start of baking. Hence this failed post. πŸ™

Thin Tuiles
These are baked tuiles. Some areas of the tuiles are apart because they are very thin. Can you see it?

Crumbly Tuiles
The tuiles crumbles apart when I tried removing them from the silicone mat. With that I was heartbroken. This recipe came from an award winning chocolatier & pattisier… which is why it’s unbelievable that the recipe would failed. I tried the recipe twice and twice yield the same unsuccessful results.

Of course I corrected the ingredients ratio later on and was happy with the results.

I refer to some tuiles recipes online and most use egg white as the binding element but not this recipe. To make this tuiles a success I added more flour and reduce the icing sugar quantity because it was very sweet.

Good for Snacking
On the bright side, I have a container fulled of crumbly tuiles for snacking. πŸ™‚
