Beetroot is a vegetable that’s not commonly found in the place where I live and even if I see them in supermarket they are into their rotting stages. However I recently find them in the night market where I frequent. And would you believe it I’ve never tasted beetroot before (prior to making this recipe)?
Beetroot is choke full of vitamins and minerals (calcium, iron, vit A, vit C). It’s high in fiber and an effective detoxifier and is beneficial for people with blood disorders like anemia and relieve constipation. The carotenoids (antioxidants) found in beetroot slow down and prevent cell damage from free radical. Because of this goodness I’m willing to try beetroot because somehow I have a bad feeling that beetroot doesn’t taste great. I choose this recipe because I wanted an easy one first and because it’s fried and not raw, I think I’m would somehow be able to accept the taste. Ha!
Tsk the above looks like blood right? That’s why beetroot is good for people with blood disorders. Like walnut which looks like human brain which is really good for our brain. Don’t you just love God’s creation?
My first impression… eekk it taste like freshly uprooted plants. But the more I eat it the more I like it. The combination of lemon, honey and mustard with beetroot is a good one. It’s sweet, earthy and zesty. But not everyone will like it e.g. my sis. I especially love the crunchy texture of beetroot.
I read that this salad taste good with chicken and sausages. As I don’t have both, I tried it with minced hash brown. It was so good! This salad still taste fab even if it’s not warm anymore.

Hot Beetroot Salad
Adapted from BBC Good Food
3 small beetroot, peeled and cut into matchsticks
juice of 1 lemon
1 tablespoon honey
1 tablespoon mustard (you can use grainy mustard too)
1. Stir-fry beetroot for about 2 minutes.
2. Add lemon juice and cook for another minute.
3. Remove from heat. Then add honey and mustard. Stir well and serve at once.
