Nigella’s Mirin Glazed Salmon


Just when I run out of idea on how to cook salmon in more ways, I chanced upon a fellow Instagrammer with a beautiful salmon dish post. Turns out he adapted the recipe from Nigella (Nigella Express). So I googled the recipe, tried it andddd loved it! The best part about this dish is that it’s simple, quick and easy. Perfect for working and busy people or lazy people like me. πŸ™‚

Let’s cook!

First to make the marinade, add mirin, brown sugar and light soy sauce into a bowl. Mix until brown sugar is dissolved.

Pour Sauce & Marinate Salmon
Place salmon fillet in a shallow wide plate and pour the marinade. Leave for 10 minutes or longer.

Cook Salmon
In a hot pan with medium low heat, cook the salmon with skin side down for 4 minutes. Cooking time depends on the thickness of the salmon. Turn the salmon over and add the leftover marinade. Cook for another 3 minutes or until the salmon is cooked. Dish out the salmon.

Turn the heat to low. Now we add rice wine vinegar to the pan to make the glaze by mixing the leftover marinade and the good stuff that stick to the pan. Once the glaze is warm, pour over the salmon and add spring onions.

You can also pair this salmon dish with noodles or rice. I’ve tried this recipe with chicken and it works wonderful too.

Nigella’s Mirin Glazed Salmon
Adapted from Nigella
Serves 1

1 salmon fillet (about 200g)
30ml mirin
15g brown sugar
30ml light soy sauce
1 tablespoon rice wine vinegar (also known as rice vinegar)
1-2 spring onions, diagonally sliced

Method:
1. In a bowl, mix mirin, brown sugar and light soy sauce until sugar is dissolved.

2. Place salmon fillet on a shallow dish. Pour the mirin+brown sugar+light soy sauce marinade onto the salmon and marinate for 10 minutes.

3. Cook salmon (skin side down) in a hot pan for 4 minutes in medium low heat.

4. Turn the salmon over, add the remaining marinade and cook for another 3 minutes. Plate the salmon.

5. Turn heat to low. Add rice vinegar to the pan and mix the remaining marinade and good stuff that stick to the pan to make the glaze.

6. Once it’s warmed, pour the glaze over the salmon and garnish with spring onions.
